5 Minute Corn Casserole – My Best and Easiest Side Dish Recipe

As part of my holiday cooking and baking week, today I want to share a side dish recipe that is an all-around winner. It is a family favorite and is often requested for me to bring to family gatherings. I always gladly oblige, mainly because it is quite possibly my number one, easiest and fastest dish to make. Honestly. I’m having a hard time thinking of another meal item I make that is faster to prepare. It goes well with most main dishes, and it’s absolutely delicious. Let’s talk more about this 5 Minute Corn Casserole and hopefully you can try it yourself!

Why This Recipe Is Amazing

Few Ingredients

First of all, this recipe only has five ingredients. I almost always have these ingredients on hand, mainly because I love to make this dish, but it’s very possible you already have them in your cabinets as well. We’ll talk about the ingredients below.

Extremely Quick and Easy

It takes no more than five minutes to get the ingredients mixed and into the oven. This is completely amazing. Busy moms…rejoice!

It’s Delicious!

This recipe is a complete winner. We have four children, each with their own ‘dislikes,’ and all of them eat this casserole. It always disappears at carry in meals. I serve it at my craft retreat, and have had people request the recipe several times. You have to try it!

Corn Casserole Ingredients

As I mentioned above, this 5 minute corn casserole recipe only has five ingredients! They are:

  • 1 stick of butter
  • 1 Jiffy cornbread mix
  • 8 oz. sour cream
  • 1 can creamed corn
  • 1 can whole corn

This recipe is so simple that I never have to pull out the recipe card to make it. I’ve had it memorized for years! Now let’s talk about how to prepare it.

Preparing The 5 Minute Corn Casserole

Begin by melting the butter in a large, microwave-safe dish.

Add sour cream and mix well.

Add cornbread mix, creamed corn (undrained) and whole corn (drained).

Mix again.

Time For Baking

After the ingredients are fully mixed, pour them into a 9″x13″ greased baking dish. Smooth the top, and it’s ready to go in the oven!

Bake at 350 degrees Fahrenheit for around 45 minutes, or the edges turn golden.

5 Minute Corn Casserole Recipe

5 Minute Corn Casserole

A quick, easy, and delicious side dish that will please even your most picky eaters! Also great for carry-in meals.

Ingredients

  • 1 stick butter
  • 1 Jiffy cornbread mix
  • 8 oz. sour cream
  • 1 can creamed corn - not drained
  • 1 can whole corn - drained

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Melt butter in a large, microwave-safe dish.
  3. Add sour cream and mix.
  4. Add cornbread mix and both cans of corn. Mix well.
  5. Spread into a greased 9"x13" baking dish. Spread top to level.
  6. Bake for around 45 minutes until set in the center and golden around the edges.
